We all love our Akorn Kamado. It's probably best bang for your buck in the sea of Kamado grills. But have you ever wondered what it is like to convert it into a pellet grill to take the advantage of both world? A well-insulated grill equipped with automatic fire start and temperature control? Plus the advantage of wide choice of wood pellets and cleaner burn. 
Well, we put one to test by adapting a pellet grill sender unit onto our Akorn grill. The result was AMAZING! It performed flawlessly with steady temperature, though some pellet feeding rate needs to be adjusted. The grill maintained 250 degrees for nearly 6 hours and the smoked ribs were juicey and flavorful. 
We are making production prototypes as of now and will update when we have more stories to tell. So come back in a couple of weeks and we should have a new post with the new product!

Do you have to compromise when grilling in small portable grills like Weber Go-Anywhere? Cooking Store-Bought Pizza in Akorn Kamado - Temperature Settings and Fire Startup

Recently we had a discussion about cooking pizza in a Kamado grill. The debate was about at what temperature should we cook our pizzas. Some say high temperature cooked pizza (650+ degrees) is the holy grail of pizza baking, that's with freshly made dough. Well, it is a skill to brag but not many of us have the time, patient and proper tools to make it that way. I love pizza and I've made thousands of pizzas while working at a Greek joint as a cook. You can cook any pizza, store bought or freshly made, at 450 degrees, to its perfection. Below are two pizzas cooked at two different degrees, both are Newman's thin crust, one cooked around 550 stone temperature and second around 450. You can see the results yourself. The 550 one got bottom cooked within 3~4 minutes while the top took 7 minutes. But the one cooked at 450 was baked perfectly.
For thin crust, it doesn't matter if it's store made dough or hand made, if the stone is over 600 degrees, you'll have to lift the dough up from the stone before the top turns brown. Yea dough comes many different ways and Neapolitan pizza is the holy grail of the pizza, but you can cook them at lower temp for the same results, just more consistently. The real goal to cook pizza right is the heat penetration from both sides should reach the middle at the same time.

Red Box/Backwoods Cabinet Smoker and TempMaster Pro Controller Are Now Paired

It was last year in Nashville where we first met Mark and his beautiful Red Box Cabinet Smoker. We also met Chase from Backwoods Smokers, whose factory manufactured all these cabinet smokers. Both are great guys and we enjoyed talking to each other for three days at the show (our booths were next to each other). We were not familiar with cabinet smokers so when Mark asked us to take one back for testing we were really stoked. 
We went to work immediately and made an adapter for the lower vent. We also sealed off most of the vents on the back to keep the airflow tightly controlled by the TempMaster Pro. The result is very good! The cabinet smoker gradually approached 225 degrees with no overshoot and stayed at 225 throughout the whole 6 hours of cooking. We'll soon be releasing the adapter for Red Box/Backwoods Cabinet smokers. Stay tuned.

Akorn Kamado 22" Searing Tray, Half Moon, Waterjet Stainless

Akorners, Here is a half moon searing tray we made today for the Akorn 22" kamado. waterjet stainless steel. Cooked some Ahi (tuna) belly and it worked like a champ. It sits on top of two lips in the charcoal bowl and it holds plenty of coal. It's about 3.5" from the bottom of the tray to the lower side of the grate. We may make a stainless grate with hinged side to work this tray. Stay tuned. Should have something for purchase in a month or so. Gonna do some more testing on it.

As an avid camper (in a '76 Westy!), Weber Go-Anywhere is my weapon of choice when It comes to outdoor cooking. The compact, durable and super versatile little grill provides enough cooking space to feed a family of four. After we finalized the TempMaster Pro temperature controller, I started to convert the weber Go-Anywhere into a smoker. We added selection for WeberGA/Smokey Joe control algorithm in the menu, made a very unique heat deflector and fabricated a lower vent adapter. The result is amazing ribs with minimum efforts and fuel. The picture below shows the baby back ribs that was cooked in a Weber Go-Anywhere and controlled by the TempMaster controller. In this vlog, we'll show you how easy it is to start smoking with your Kamado Joe Classic grill and TempMaster Pro controller. Many controllers require you to start the fire and let the controller kick in after grill temperature rises to a certain degree, not with TempMaster Pro. All you have to do is to lit a corner of the charcoal, set the target temperature on the TempMaster, and let the controller to bring up the grill temperature to the preset target. It's that simple!

Hi Everyone, it has been a couple of weeks since our last post. We went the HPBExpo in Dallas and had a lot interests from other grill makers. So we were busy following up with that. Today, we finally get around to write up about the camper power box for our TempMaster controller. We found these 12V Li-ion battery packs from Amazon works great (6000 mAh for 15+ hrs) and can be charged with our AC adapter for the controller. The box now can hold the controller, battery, vent hose and 3 probes. The carrying box is CNC cut out of Plano Ammo Box (Made in USA!) with cutouts on the side for hose and probes. Now you can do ribs in a weber go anywhere for 4-5 hours unattended. Let me know if you have any questions. Here in Hawaii there is no power at camp grounds, so I made this box with a 12v UPS backup battery in it to power the controller off grid. But I found I use it all the time even at home. The Lead Acid battery was heavier and required a car battery charger to charge. But now with the Li-ion battery this box can pack all the accessories, just grab 'n go! It's available on our website at BBQube.us
